  • 1-2 teaspoons honey optional
  • 5-6 mint leaves optional

  • Rinse the lemon balm leaves and prepare the lemon and ginger slices.
  • In a saucepan, bring 4 cups of water to a gentle boil.
  • Reduce heat to low and add lemon balm, lemon slices, ginger, and mint (if using). Simmer for 5-7 minutes.
  • Remove from heat and strain the infusion into a teapot or pitcher.
  • Stir in honey (if desired) while the infusion is still warm.
  • Serve warm or pour over ice for a refreshing drink.
